Gourmetstube Einhorn in Mules (Alto Adige) has gained a second Michelin star. Gourmetstube Einhorn is housed in the Romantik Hotel Stafler and executive chef is 42-year-old Peter Girtler. Restaurant Perbellini, now featured in the guide as Casa Perbellini, has managed to retain its two Michelin stars. The restaurant moved from Isola Rizza to Verona in 2015. To makes things even more confusing, the old Perbellini in Isola Rizza is still open for business with a new chef and the restaurant is awarded one Michelin star in the new guide.

Restaurant Combal Zero in Rivoli lost its second star. Two-star restaurant Il Mosaico has closed in the past year and is no longer featured in the guide. The number of two-star restaurants in Italy now stands at 38.
All eight three-star restaurants in Italy held on to Michelin's highest accolade. Italy's three-star restaurants are: Reale in Castel Di Sangro, Piazza Duomo in Alba, Da Vittorio in Brusaporto, Dal Pescatore in Canneto sull'Oglio, Le Calandre in Rubano, Osteria Francescana in Modena, Enoteca Pinchiorri in Florence and La Pergola in Rome.
In the 2016 guide Michelin has awarded no fewer than 26 restaurants their first star, but 24 restaurants have lost their star. This brings the total of one-star restaurants in Italy to 288 (285 in the 2015 guide). This year's winners in Italy's main cities are:

The number of Bib Gourmand (a meal for less than €25) restaurants in Italy drops from 296 to 271 in the 2016 guide, with 24 new entries.
